Only in Minnesota would you find a drive-thru Lefse stand! Uff-Da! Don't ya just love it!?

Lefse should be the Minnesota state food.

It isn't easy to make, but boy is it delicious when topped with butter, sugar, and maybe a little sprinkle of cinnamon.

Lefse is a traditional Norwegian soft, flat pastry delicacy.

Lefse is made using flour, riced potatoes, cream, butter, or lard. It is cooked on a large, flat griddle using a special stick. A Lefse Stick.

There is a family by Evansville, Minnesota that has done something I don't think any Minnesotan has done before.

Kim Englund posted on her Facebook page: “Lefse drive-thru. Open Saturdays 10-noon. November and December. County road 1 between Evansville and Melby. Lefse(3 rounds), honey butter, flatbread, cowboy candy, cowgirl candy. $6 each.”

The Fergus Falls Journal quotes Kim Englund's comments about this genius idea, “It’s kind of an accident how it happened. Both my grandmas used to make (lefse), and my attitude is that if I’m going to make a little bit, I may as well make a ton.”

People want to buy local and know what’s in their food I feel it is coming back to that idea, and it’s all the locals that support it. That’s what’s great about small towns.

We started making it and it became our family vacation money...And yes, we use real potatoes.”
