Lindstrom Bakery has undergone some major changes in the past year, but one thing remains, the title of 'best doughnuts' in Minnesota.

Bernie Coulombe, the previous 48-year owner of the bakery in Lindstrom, put the historic business on the market last fall. News that was devastating to the community. 

Writer David Landsel of Food & Wine Magazine declared this Minnesota bakery to be the best in the state. He praised Coulombe for her cake doughnuts that were "crispy-crunchy on the outside, fluffy on the inside."

So what can patrons expect from this new ownership change?

The new owners, Angie and Eric of Forest Lake, had announced that they plan to continue to use the recipes that made this Scandinavian bakery so loved. 

Angie told Bring Me The News that "with the help of the outgoing owner and baker of 48 years, we will work to keep the community's favorite items just as they are —donuts, rusks, and crisps — and over the next few years, transform the space and menu."

The couple does have a bright plan for the future. They officially open for business today, February 1st. As of now, they will run the menu as is, but they will continuously be working behind the scenes on "product development, play with new, locally ground organic flours, and even play with a new line (Piper's Pastries)."

By 2023, they hope the bakery will expand into a farm-to-table café and bakery that offers a larger menu (with all the traditional classics, of course) and dog-friendly treats!

The bakery will also undergo a name change in the near future, transforming from Lindstrom Bakery to The Good Neighbor Café and Bakery.

This hometown bakery has been around for over 100 years, and hopefully, under its new ownership, will be open for another 100 more.
